fa ارزیابی ریسک‌ سلامت ناشی از فلزات سنگین در اثر مصرف ماهی سوف (Sander lucioperca) آلوده به انگل سستودا در شمال‌غرب ایران (مطالعه موردی: سد ستارخان) Health Risk Assessment of Heavy Metals Due to Consumption of Pike-Perch (Sander lucioperca) Infected with Cestoda Parasites in Northwest Iran (Case Study: Sattarkhan Dam) تخصصي Special پژوهشي Research <div style="text-align: justify;">مقدمه: در ایران و سایر مناطق جهان، مطالعات اندکی به بررسی تجمع فلزات سنگین در زنجیره غذایی انسان و ارتباط متقابل انگل‌ها و میزبان‌ها پرداخته‌اند. پژوهش حاضر با هدف بررسی اثر روابط انگلی و زنجیره‌های غذایی بر ریسک سلامت ناشی از تجمع سرب، کادمیوم و مس در اثر مصرف ماهی سوف (Sander lucioperca) در سد ستارخان (شهرستان اهر، استان آذربایجان شرقی) انجام شد. مواد و روش‌ها: نمونه‌برداری میدانی از فروردین 1401 تا آذر 1403 انجام شد. در مجموع 77 نمونه شامل 28 قطعه ماهی سوف بالغ، 25 نمونه انگل کرم پهن روده‌ای و 24 نمونه گاماروس (Amphipoda) با استفاده از تور گوشگیر از مناطق مختلف سد جمع‌آوری شد. انگل‌ها با استفاده از کلیدهای شناسایی معتبر تا سطح جنس شناسایی شدند. پس از هضم بافت‌ها، غلظت فلزات سنگین با استفاده از اسپکتروفتومتری جذب اتمی اندازه‌گیری شد. ارزیابی ریسک سلامت با محاسبه شاخص‌های EDI، THQ، CR و %TDI انجام گرفت. نتایج: میانگین طول کل، وزن کل و سن ماهیان دارای انگل به‌ترتیب 52 سانتی‌متر، 550 گرم و 3/9 سال بود. انگل‌های کرم پهن جدا شده از روده ماهیان آلوده متعلق به دو جنس از رده سستودا (کرم‌های نواری) شامل Proteocephalus و Caryophyllaeus  بودند. نتایج نشان داد که به‌جز مس، غلظت سایر فلزات در بافت عضلانی ماهیان فاقد انگل به‌طور معنی‌داری بالاتر از ماهیان آلوده به انگل بود. غلظت سرب و کادمیوم در ماهیان فاقد انگل (به‌ترتیب 0/31 و 0/47 میکروگرم بر گرم وزن خشک) نسبت به ماهیان آلوده (0/20 و 0/30 میکروگرم بر گرم) بیش تر بود. غلظت فلزات در انگل‌های کرم پهن به‌طور معنی‌داری بیش تر از میزبان و گاماروس بود. شاخص‌های EDI، THQ و CR برای فلزات در ماهیان آلوده 45-36 درصد کم تر از ماهیان فاقد انگل بود. بحث و نتیجه‌گیری: مصرف ماهی سوف در این منطقه ریسک غیرسرطان‌زایی قابل قبولی دارد (TTHQ<1)، اما ریسک سرطان‌زایی به‌ویژه برای کادمیوم بالاتر از آستانه مجاز (6-10×1) است. حضور انگل‌های کرم پهن روده‌ای این ریسک را حدود 45-36 درصد کاهش می‌دهد. این یافته‌ها اهمیت در نظرگرفتن روابط میزبان-انگل را در ارزیابی‌های ریسک سلامت و پایش آلودگی اکوسیستم‌های آبی نشان می‌دهد.</div> <div style="text-align: justify;">Introduction: In Iran and other parts of the world, few studies have investigated the accumulation of heavy metals in the human food chain and the interrelationship between parasites and their hosts. The present study aimed to investigate the effect of parasitic relationships and food chains on the health risk associated with the accumulation of lead, cadmium, and copper due to the consumption of pike-perch (Sander lucioperca) in the Sattarkhan Dam (Ahar County, East Azerbaijan Province). Materials & Methods: Field sampling was conducted from April 2022 to December 2024. A total of 77 samples, including 28 adult pike-perch, 25 intestinal tapeworm samples, and 24 gammarids (Amphipoda), were collected from different areas of the dam using gill nets. Parasites were identified to the genus level using valid identification keys. After tissue digestion, the concentration of heavy metals was measured using atomic absorption spectrophotometry. Health risk assessment was performed by calculating the EDI, THQ, CR, and %TDI indices. Results: The mean total length, total weight, and age of infected fish were 52 cm, 550 g, and 3.9 years, respectively. The tapeworms isolated from the intestines of infected fish belonged to two genera of the order Cestoda: Proteocephalus and Caryophyllaeus. The results showed that, except for copper, the concentration of other metals in the muscle tissue of uninfected fish was significantly higher than in fish infected with parasites. The concentrations of lead and cadmium in uninfected fish (0.31 and 0.47 µg/g dry weight, respectively) were higher than in infected fish (0.20 and 0.30 µg/g). Metal concentrations in the tapeworms were significantly higher than in their hosts and in gammarids. The EDI, THQ, and CR indices for metals in infected fish were 36-45% lower than in uninfected fish. Conclusion: Consumption of pike-perch from this area poses an acceptable non-carcinogenic risk (Total THQ<1), but the carcinogenic risk, especially for cadmium, exceeds the permissible threshold (1×10⁻⁶). The presence of intestinal tapeworms reduces this risk by approximately 36-45%.
